My 10+ years in London have instilled in me a deep appreciation for excellence. Yet, the quality and beauty of a dish, of a plate, are not enough for me.

Here, in my home, through my menu, I want to bring meaning to my work and to that of those around me—my producers, my team, my collaborators.

My ambition is to create a bridge between past, present, and future.

The Past, because I sometimes take on the great monuments of gastronomy and reimagine them, but also because I deeply value the often ancestral expertise of our producers and strive to showcase their craftsmanship.

The Present, because my menu is a reflection of the seasons, and I prioritize working with producers from Île-de-France, particularly the Yvelines region, who dedicate themselves daily to delighting us and keeping our terroir alive.

The Future, because my practices, like those of the passionate people I collaborate with—farmers, vegetable growers, winemakers, fishers, cheese artisans—are all environmentally conscious.
