My inspirations and aspirations.

My career of more than 10 years in London has given me a taste for excellence, but the quality and beauty of a dish, of a plate, are not enough for me.
I want here, in my house, in my map, to give meaning to my work and that of those around me, my producers, collaborators.
My ambition is to offer you links between past, present and future.
The past, because I sometimes tackle monuments of gastronomy that I revisit, but also because I am keen to enhance the often ancestral know-how of our producers.
The Present, because my menu aims to reflect the season and I favour producers from the Île de France, or even the Yvelines, as much as possible, who work daily to delight us and bring our region to life.
The future, because my practices, like those of the enthusiasts around me: breeders, market gardeners, winegrowers, fishermen, refiners, etc., are respectful of the environment.
