After spending ten years in prestigious London establishments, including working with Pierre Koffmann, Hélène Darroze, and Helena Puolakka, I decided to take over La Table & L’Auberge du Château to create my own vision.
Opened in May 2023, I envisioned this home as a **cozy and contemporary retreat**, nestled between **garden and forest**, designed for gourmet travelers seeking **nature and authenticity**.
In the heart of the **Chevreuse Valley, in Dampierre-en-Yvelines**, in a naturally bucolic yet historically rich environment, I have imagined the experience I offer as a **bridge between past, present, and future**.
In the rooms, through the ambiance and materials, **retro and modern elements blend harmoniously**.
As for my **gastronomic cuisine**, which is designed to **reflect the seasons** and incorporate as many **local ingredients as possible**, I am committed to **enhancing the quality of the sometimes ancestral craftsmanship** of my partners—who, like me, are passionate about awakening your gourmet senses.
